Three Day Raw Chocolate Making Intensive
Join us as we dive deep into the world of all things raw, vegan chocolate! This class includes three days (18 hrs) of one-on-one training and covers all the basics of chocolate making. You will receive a detailed manual filled with recipes and instructions, and you’ll get to keep all the chocolate you make.
Course content can be tailored to your needs and experience. This training can be taught one-on-one or in a group setting and can be scheduled at your convenience. Get ready to get your hands dirty, this is not about lecture and observation, it’s about making chocolate!
Topics covered include:
Lectures: Cacao products - what they are and how we use them, what raw cacao is, and what bean to bar chocolate means. How to use sweeteners, essential oils, and Medicine Flower essences. How to add crunch, superfoods, and chew to your chocolates. How to calculate cacao content, using alternate and additional fats in chocolate making.
Making simple, untempered chocolate
Tempering science - what it is, why we do it, and how to temper
Raw toppings, decorations, and biscuits
Enrobing, dipping, and decorating
Making fudge and ganache
As time allows - making white chocolate and advanced decorating techniques
