Join us as we dive deep into the world of all things raw, vegan chocolate! This class includes three days (18 hrs) of one-on-one training and covers all the basics of chocolate making. You will receive a detailed manual filled with recipes and instructions, and you’ll get to keep all the chocolate you make.

Course content can be tailored to your needs and experience. This training can be taught one-on-one or in a group setting and can be scheduled at your convenience. Get ready to get your hands dirty, this is not about lecture and observation, it’s about making chocolate!

Topics covered include:

  • Lectures: Cacao products - what they are and how we use them, what raw cacao is, and what bean to bar chocolate means. How to use sweeteners, essential oils, and Medicine Flower essences. How to add crunch, superfoods, and chew to your chocolates. How to calculate cacao content, using alternate and additional fats in chocolate making.

  • Making simple, untempered chocolate

  • Tempering science - what it is, why we do it, and how to temper

  • Raw toppings, decorations, and biscuits

  • Pralines

  • Enrobing, dipping, and decorating

  • Making fudge and ganache

  • As time allows - making white chocolate and advanced decorating techniques

Raw Chocolate Making Masterclass

If you’re interested in learning hands-on how to make raw chocolate, we offer private classes at our production facility on a variety of topics. You will learn hands-on, and one on one, from the premier, raw chocolatier in Bali. Classes are 2.5 hours long, interactive, and most of all FUN! Come prepared to get your hands covered in chocolate and your tastebuds delighted. You’ll not only leave with tons of knowledge, but all kinds of sweet treats to take home with you.

Learning can be tailored to what you’re interested in, including (but not limited to): tempering, enrobing, praline, moulding, bars, barks, bonbons and so much more.

We also offer group classes for adults and kids alike.

Kid's Chocolate Making Classes

Kid’s Chocolate Making Classes

Join us at our production facility in Tegallalang, Bali for an interactive, educational and fun chocolate making experience for kids of all ages.

This 2.5 hour workshop covers the basics of making, enrobing and decorating raw praline, as well as moulding tempered chocolate. From dinosaurs, to robots, to purses, to hearts, we’ve got a chocolate mould to capture the mind of even the most imaginative children. Every single aspect of the class is hands-on so no boring lectures.

Kids get to keep all the chocolate they make (you’re welcome mom and dad), and will also get an opportunity to see and hear about how our chocolate is made.

Raw Chocolatier Certification - Level 1 / Level 2

RAW CHOCOLATIER CERTIFICATION COURSES, LEVELS 1 and 2

Join Elevated Cacao and Sayuri Healing Food for Bali’s very first, Raw Chocolatier Certification. Whether you want to start or expand your own raw, vegan chocolate business, or you simply want to spend a joy-filled week in the wondrous world of raw, vegan chocolate making this course is for you! 

In Level 1, you will learn all about the magical world of raw cacao, superfoods, sweeteners, and other chocolate-specific ingredients. You will learn to temper your own raw, vegan chocolate, pralines, mendiants, bars, enrobed delights, and more. In Level 2, we’ll go deeper into sourcing ingredients, stonegrinding, tempering, bars, bonbons, advanced pralines, and more.
